In a food processor, combine flour, butter, sugar, and salt until mixture resembles coarse crumbs. Add egg yolks and water, and process until dough comes together.

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 1 hour.

Preheat the oven to 375°F (190°C).

On a lightly floured surface, roll out the dough and transfer to a tart pan. Press the dough into the pan and trim any excess.

In a small bowl, whisk together honey, cornstarch, and lemon juice.

Arrange the mixed fruits on top of the tart crust. Drizzle the honey mixture over the fruits.

Bake for 25 minutes or until the crust is golden brown and the fruits are tender.

Allow the tart to cool for 10 minutes, then dust with powdered sugar. Serve chilled.
