Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, mix together the walnuts, cranberries, rolled oats, whole wheat flour, baking powder, cinnamon, and salt.

In a separate bowl, whisk together the coconut oil, maple syrup, vanilla extract, and egg.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Flatten each portion slightly with the back of a spoon.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
