  2. In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Add the vanilla extract and salt, mix well.
  4. Gradually add the flour and mix until a dough forms.
  5. Fold in the chopped pistachios.
  6. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
  7. Cut out desired shapes using cookie cutters.
  8. Place the cookies on a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes or until the edges turn golden brown.
  10. Remove from the oven and let the cookies cool on a wire rack.
