  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix together the flour, sugar, cinnamon, baking powder, and salt.
  3. Cut the butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  4. In a separate bowl, beat the eggs and vanilla extract together. Pour the egg mixture into the flour mixture and stir until well combined.
  5. Peel and chop the apples into small pieces. Fold the chopped apples into the batter.
  6. Pour the batter into the greased baking dish and spread it evenly.
  7. Bake for 35-40 minutes, or until the bars are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let it cool in the baking dish for 30 minutes.
  9. Cut into bars and serve.
