Purple Cow Cupcakes
The name ‘Purple Cow’ comes from the combination of the purple color and the creamy texture of the cupcakes, resembling a cow’s appearance.

Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.

Gradually add the boiling water to the batter, mixing continuously. Stir in the purple food coloring.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cupcakes cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Once the cupcakes are cooled, pipe whipped cream on top of each cupcake and sprinkle with purple sprinkles.
