Poke cupcakes are a fun twist on traditional cupcakes, with a surprise filling in the center!

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the egg, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Gradually add the boiling water to the batter, mixing well.
  5. Fill each cupcake liner about 2/3 full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Remove the cupcakes from the oven and let them cool completely.
  8. Once the cupcakes are cooled, use a small spoon or a cupcake corer to create a small hole in the center of each cupcake.
  9. Fill each hole with strawberry jam.
  10. In a separate bowl, whisk together the powdered sugar and enough water to make a thick glaze.
  11. Drizzle the glaze over the cupcakes.
  12. Top each cupcake with a fresh strawberry.
