Jeweled Shortbread
Shortbread originated in Scotland and has been enjoyed for centuries. It is traditionally made with simple ingredients and has a rich, buttery flavor.

Preheat the oven to 325°F (160°C). Line a baking sheet with parchment paper.

In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.

Add the vanilla extract and mix well.

Gradually add the flour and mix until the dough comes together.

Fold in the dried cranberries, pistachios, and white chocolate.

Roll out the dough on a lightly floured surface to about 1/4 inch thickness.

Use cookie cutters to cut out desired shapes and place them on the prepared baking sheet.

Bake for 18-20 minutes, or until the edges are lightly golden.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.
