Preheat the oven to 180°C (350°F).

Slice the eggplant, zucchini, red bell pepper, and onion into thin rounds.

Heat olive oil in a pan and sauté the onion and garlic until translucent.

Add the sliced vegetables and cook for 5 minutes.

Stir in the tomato sauce, dried oregano, salt, and black pepper.

Transfer the mixture to a baking dish and top with crumbled feta cheese.

Bake in the preheated oven for 30-35 minutes, until the vegetables are tender and the cheese is golden.

Garnish with fresh parsley before serving.
