  1. Cook rice according to package instructions.
  2. In a wok or large pan, heat sesame oil over medium heat.
  3. Add minced garlic and ginger, and stir-fry for 1 minute.
  4. Add mixed vegetables and stir-fry for 3-4 minutes until tender.
  5. In a small bowl, whisk together soy sauce, cornstarch, and vegetable stock.
  6. Push the vegetables to one side of the pan and add the tofu. Cook for 2-3 minutes until lightly browned.
  7. Pour the sauce mixture over the tofu and vegetables. Stir well to combine.
  8. Cook for another 2-3 minutes until the sauce thickens.
  9. Serve the stir-fry over cooked rice and garnish with chopped spring onions.
