Feng Shui is a Chinese philosophy that focuses on harmonizing individuals with their surrounding environment. This dish is named ‘Feng Shui’ to represent the balance of flavors and colors in the stir-fry.

Cook rice according to package instructions.

In a wok or large pan, heat sesame oil over medium heat.

Add minced garlic and ginger, and stir-fry for 1 minute.

Add mixed vegetables and stir-fry for 3-4 minutes until tender.

In a small bowl, whisk together soy sauce, cornstarch, and vegetable stock.

Push the vegetables to one side of the pan and add the tofu. Cook for 2-3 minutes until lightly browned.

Pour the sauce mixture over the tofu and vegetables. Stir well to combine.

Cook for another 2-3 minutes until the sauce thickens.

Serve the stir-fry over cooked rice and garnish with chopped spring onions.
