Artichoke and Spinach Gratin

Preheat the oven to 375°F (190°C).

In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Add the flour and cook for 1 minute, stirring constantly. Gradually whisk in the milk until smooth.

Stir in the artichoke hearts and spinach. Cook for 5 minutes, or until heated through.

Remove from heat and stir in the Parmesan cheese, salt, and black pepper.

Transfer the mixture to a greased baking dish. Sprinkle breadcrumbs on top.

Bake for 20-25 minutes, or until the top is golden and bubbly.
