  1. Preheat the oven to 200°C.
  2. Peel and core the quinces, then cut them into wedges.
  3. Melt the butter in a large skillet over medium heat. Add the quince wedges and sugar, and cook until caramelized, about 10 minutes.
  4. Roll out the puff pastry and cut it into 4 equal circles.
  5. Place the caramelized quince wedges in a single layer in the bottom of each individual tart tin.
  6. Place a puff pastry circle on top of the quince wedges in each tin.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
  8. Remove from the oven and let cool for 10 minutes.
  9. Carefully invert each tart tatin onto a serving plate.
  10. Serve with a scoop of sheep's milk ice cream on top.
