Preheat the grill.

Slice the eggplant and red pepper.

Drizzle olive oil, salt, and pepper on the eggplant and red pepper slices.

Grill the eggplant and red pepper slices until tender.

In a bowl, combine spinach, balsamic vinegar, olive oil, salt, and pepper.

Mix well to coat the spinach.

Spread fontina cheese on one side of each bread slice.

Layer the grilled eggplant and red pepper slices on top of the fontina cheese.

Top with another bread slice.

Grill the sandwiches until the cheese is melted and the bread is toasted.
