  1. Preheat a grill or a non-stick pan on medium heat.
  2. In a mixing bowl, combine mayonnaise, mustard, salt, and black pepper.
  3. Spread the mixture evenly on 4 slices of bread.
  4. Layer spinach leaves, cooked chicken breast, cheese slices, and sliced tomatoes on top.
  5. Place the remaining 4 slices of bread on top to form sandwiches.
  6. Spread butter on the outer sides of the sandwiches.
  7. Grill the sandwiches for 3-4 minutes on each side until the bread is golden brown and the cheese is melted.
  8. Remove from the grill or pan and allow the sandwiches to rest for 5 minutes.
  9. Cut the sandwiches diagonally into halves, creating pocket sandwiches.
