Pocket Sandwiches
Pocket sandwiches, also known as stuffed sandwiches or sealed sandwiches, were popularized in the 1970s as a convenient and portable meal option.

Preheat a grill or a non-stick pan on medium heat.

In a mixing bowl, combine mayonnaise, mustard, salt, and black pepper.

Spread the mixture evenly on 4 slices of bread.

Layer spinach leaves, cooked chicken breast, cheese slices, and sliced tomatoes on top.

Place the remaining 4 slices of bread on top to form sandwiches.

Spread butter on the outer sides of the sandwiches.

Grill the sandwiches for 3-4 minutes on each side until the bread is golden brown and the cheese is melted.

Remove from the grill or pan and allow the sandwiches to rest for 5 minutes.

Cut the sandwiches diagonally into halves, creating pocket sandwiches.
