Preheat the oven to 200°C (400°F).

Roll out the puff pastry and cut it into a circle slightly larger than the size of your baking dish.

Slice the tomatoes into thick slices.

In a skillet, melt the butter over medium heat. Add the brown sugar and balsamic vinegar, stirring until the sugar has dissolved.

Add the tomato slices to the skillet and cook for 3-4 minutes, until slightly softened.

Arrange the tomato slices in a single layer in the bottom of the baking dish.

Sprinkle the thyme leaves, salt, and black pepper over the tomatoes.

Place the puff pastry circle on top of the tomatoes, tucking in the edges.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.

Remove from the oven and let it rest for 10 minutes.

Place a serving plate on top of the baking dish and carefully flip it over to release the tart onto the plate.
