  1. Preheat the oven to 180°C. Grease and line a baking tin.
  2. Melt the butter, golden syrup, and brown sugar in a saucepan over low heat.
  3. Remove from heat and stir in the ginger crunch biscuit crumbs and desiccated coconut.
  4. Press the mixture into the prepared baking tin and bake for 15-20 minutes, or until golden brown.
  5. While the base is baking, prepare the icing by mixing the icing sugar, ground ginger, melted butter, and lemon juice in a bowl.
  6. Once the base is cooked, remove from the oven and spread the icing evenly over the top.
  7. Allow the ginger crunch to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  8. Once cooled, cut into squares or rectangles and serve.
