In a small bowl, dissolve the yeast and 1 tablespoon of sugar in warm milk. Let it sit for 5 minutes.

In a large bowl, combine the flour, remaining sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Add the yeast mixture, eggs, and vanilla extract to the dry ingredients. Mix until a soft dough forms.

Knead the dough on a lightly floured surface for 5-7 minutes, or until smooth and elastic.

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.

Punch down the dough and knead in the raisins and optional farmer's cheese.

Shape the dough into a babka and place it in a greased loaf pan. Cover and let it rise for another 30 minutes.

Preheat the oven to 350°F (175°C). Bake the babka for 45-50 minutes, or until golden brown.
