In a large bowl, whisk together the pancake mix, milk, and eggs until well combined.

In a separate pan, melt 1 tablespoon of butter over medium heat. Add the mushrooms and cook until they are golden brown and tender, about 5 minutes.

In another pan, melt the remaining butter over medium heat. Pour 1/4 cup of the pancake batter into the pan and spread it out into a thin, even layer. Cook for 2-3 minutes, until the edges start to brown.

Flip the pancake and cook for another 2-3 minutes, until it is cooked through. Repeat with the remaining batter.

In a small saucepan, melt the gorgonzola cheese over low heat until it is smooth and creamy.

To serve, top each pancake with a spoonful of the creamy gorgonzola mushrooms and a handful of arugula. Season with salt and pepper to taste.
