Mint and chocolate have been a popular flavor combination since the ancient Aztecs, who believed that mint had the power to enhance the flavor of chocolate.

Preheat the oven to 350°F (175°C). Grease a baking dish.

Melt the dark chocolate and unsalted butter in a heatproof bowl over simmering water.

In a separate bowl, whisk together the granulated sugar and eggs until well combined.

Gradually add the melted chocolate mixture to the egg mixture, stirring constantly.

Sift in the all-purpose flour and cocoa powder, and add the peppermint extract and salt. Mix until just combined.

Pour the batter into the prepared baking dish and smooth the top.

Bake for 25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

Remove from the oven and let cool in the baking dish for 30 minutes.
