Creamy Kohlrabi Soup

Peel and chop the kohlrabi, potato, onion, and garlic.

In a large pot, melt the butter over medium heat.

Add the chopped onion and garlic, and sauté until fragrant.

Add the kohlrabi and potato to the pot, and cook for 5 minutes.

Pour in the vegetable broth and bring to a boil.

Reduce heat, cover the pot, and simmer for 20 minutes or until the vegetables are tender.

Using an immersion blender or regular blender, puree the soup until smooth.

Stir in the heavy cream, salt, and black pepper.

Cook for an additional 5 minutes.
