  2. Roll out the pie crust and line a quiche dish with it.
  3. In a skillet, heat olive oil and sauté the onion and garlic until translucent.
  4. Add the zucchini, eggplant, and bell peppers. Cook until tender.
  5. In a bowl, whisk together the eggs, milk, basil, salt, and black pepper.
  6. Spread the sautéed vegetables over the pie crust.
  7. Pour the egg mixture over the vegetables.
  8. Sprinkle with Parmesan cheese.
  9. Bake in the preheated oven for 40 minutes or until the quiche is set and golden brown.
  10. Allow to rest for 10 minutes before serving.
