Biscoff, also known as Speculoos, is a type of spiced shortcrust biscuit that originated in Belgium.

Preheat the oven to 325°F (160°C).

Crush the Biscoff biscuits into fine crumbs.

Melt the butter and mix it with the biscuit crumbs.

Press the mixture into the bottom of a greased springform pan.

In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth.

Add the eggs one at a time, beating well after each addition.

Stir in the sour cream.

Pour the cream cheese mixture over the biscuit base.

Drop spoonfuls of Biscoff spread onto the cream cheese mixture and swirl it with a knife.

Bake for 50-60 minutes until the center is set.

Turn off the oven and leave the cheesecake inside for 1 hour.

Remove from the oven and let it cool completely.

Refrigerate for at least 2 hours before serving.
