Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.

Cut the cold unsalted butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.

In a separate small bowl, dissolve the instant coffee granules in the heavy cream.

Add the mashed ripe bananas, coffee cream mixture, egg, and vanilla extract to the dry ingredients. Stir until just combined.

Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a circle about 1-inch thick.

Use a sharp knife or a biscuit cutter to cut the dough into 8 wedges.

Transfer the scones to the prepared baking sheet and brush the tops with a little heavy cream.

Bake for 18-20 minutes, or until the scones are golden brown.
