Oven-Crisped Parmesan and Sage Truffle Fries

Preheat the oven to 220°C (425°F).

Cut the potatoes into thin fries.

In a large mixing bowl, combine the potatoes, olive oil, salt, and black pepper. Toss until the potatoes are evenly coated.

Spread the potatoes in a single layer on a baking sheet.

Bake for 25-30 minutes, or until the fries are golden and crispy.

While the fries are baking, chop the fresh sage leaves and grate the Parmesan cheese.

Once the fries are done, remove them from the oven and sprinkle with the chopped sage leaves and grated Parmesan cheese.

Drizzle with truffle oil.

Return the baking sheet to the oven for an additional 2-3 minutes, or until the cheese has melted.
