Preheat the oven to 180°C (350°F).

Peel and thinly slice the potatoes and onion.

Heat olive oil in a large pan over medium heat. Add the sliced onion and garlic, and cook until softened.

Layer half of the sliced potatoes in a baking dish, followed by half of the cooked onion and garlic mixture. Sprinkle with salt, pepper, and thyme leaves.

Repeat the layering process with the remaining potatoes, onion, garlic, salt, pepper, and thyme.

Pour vegetable stock over the layers.

Cover the baking dish with foil and bake for 40 minutes.

Remove the foil and bake for an additional 20 minutes, or until the potatoes are golden and tender.

Let the dish rest for 10 minutes before serving.
