  1. Preheat the oven to 375°F (190°C).
  2. Peel and thinly slice the potatoes.
  3. Thinly slice the onion and mince the garlic.
  4. In a mixing bowl, combine the heavy cream, Dijon mustard, salt, black pepper, minced garlic, and fresh thyme.
  5. Layer half of the sliced potatoes in a greased baking dish.
  6. Sprinkle half of the sliced onion over the potatoes.
  7. Pour half of the cream mixture over the potatoes and onion.
  8. Sprinkle half of the Gruyere cheese and Parmesan cheese over the cream mixture.
  9. Repeat the layers with the remaining potatoes, onion, cream mixture, and cheeses.
  10. Cover the baking dish with foil and bake for 45 minutes.
  11. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
  12. Let the dish rest for 10 minutes before serving.
