Citrus Shortbread Cookies
Shortbread cookies originated in Scotland and are traditionally made with only three ingredients: butter, sugar, and flour. The addition of citrus zest in this recipe adds a refreshing twist to the classic shortbread cookie.

In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.

Add the all-purpose flour, cornstarch, lemon zest, orange zest, lime zest, and salt. Mix until the dough comes together.

Divide the dough in half and shape each half into a log. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Slice the chilled dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet.

Bake for 10-12 minutes, or until the edges are golden brown.
