In a mixing bowl, whisk together flour, milk, eggs, sugar, and salt to make the crepe batter. Let it rest for 10 minutes.

Heat a non-stick pan over medium heat and melt butter. Pour a ladleful of batter into the pan and swirl it around to coat the bottom.

Cook the crepe for about 1-2 minutes until the edges start to brown. Flip and cook for another minute. Repeat with the remaining batter.

In a heatproof bowl, melt the chocolate over a pan of simmering water. Let it cool slightly.

In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Gently fold the whipped cream into the melted chocolate until well combined.

Place a crepe on a serving plate and spread a layer of chocolate mousse on top. Repeat with the remaining crepes and mousse, stacking them up.

Refrigerate the crepes for at least 2 hours to set.
