Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt.

In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg, molasses, and vanilla extract until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll the dough into 1-inch balls and place them on the prepared baking sheet. Flatten each ball with a fork, making a crisscross pattern.

If desired, sprinkle chopped peanuts on top of each cookie.

Bake for 8-10 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
