In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.

Add the egg and vanilla extract, and mix until well combined.

In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Shape the dough into 12 equal-sized balls.

Press a mint chocolate truffle into the center of each dough ball, and seal the dough around it.

Place the dough balls on a baking sheet lined with parchment paper.

Bake at 350°F (180°C) for 10-12 minutes, or until the edges are set.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
