Chocolate Ginger Crepes

In a large bowl, whisk together the flour, cocoa powder, sugar, ground ginger, and salt.

In a separate bowl, whisk together the milk and egg.

Gradually pour the milk mixture into the dry ingredients, whisking until smooth.

Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter.

Pour 1/4 cup of batter into the skillet and swirl to coat the bottom. Cook for 2-3 minutes, or until the edges start to lift.

Flip the crepe and cook for an additional 1-2 minutes. Repeat with the remaining batter.

Remove the crepes from the skillet and set aside.

In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring until smooth.

Spread a thin layer of the melted chocolate on each crepe.

Roll the crepes and place them on a serving plate.

Top with whipped cream and sprinkle with candied ginger.
