Chocolate Fudge Cupcakes

This is vegetarian recipe. Dish can be prepared in 48 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a large bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture.

Fill each cupcake liner about 2/3 full with the batter.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Remove the cupcakes from the oven and let them cool in the pan for 5 minutes.

Transfer the cupcakes to a wire rack to cool completely.

In a small saucepan, heat the heavy cream until it just begins to simmer.

Pour the cream over the chopped chocolate and let it sit for 2 minutes.

Whisk the chocolate and cream together until smooth and glossy.

Let the ganache cool for 10 minutes.

In a medium bowl, sift the powdered sugar to remove any lumps.

Gradually add the powdered sugar to the ganache, whisking until smooth.

Dip the tops of the cooled cupcakes into the ganache, allowing any excess to drip off.

If desired, decorate with sprinkles.

Let the ganache set for 10 minutes before serving.
