  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the melted butter, granulated sugar, and brown sugar until well combined. Add the egg and vanilla extract, and mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the crushed potato chips.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring between each interval, until smooth.
