Ingredients
Instructions
-
Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
-
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
-
Add the egg, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
-
Gradually add the boiling water to the batter while mixing continuously. The batter will be thin, but that's normal.
-
Fill each cupcake liner about two-thirds full with the batter.
-
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
-
Remove the cupcakes from the oven and let them cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.
-
In a separate mixing bowl, beat the cream cheese and butter until creamy and smooth.
-
Gradually add the powdered sugar and vanilla extract to the cream cheese mixture. Beat until well combined.
-
Melt the semi-sweet chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
-
Add the melted chocolate to the cream cheese mixture and beat until well combined.
-
Once the cupcakes are completely cooled, frost them with the chocolate cream cheese frosting.
-
Enjoy!
