Preheat the oven to 375°F (190°C). Grease a baking dish.

Slice the zucchini into thin rounds.

Heat olive oil in a skillet over medium heat. Add the onion and garlic, and cook until softened.

Add the zucchini, Italian seasoning, salt, and black pepper to the skillet. Cook until the zucchini is tender.

In a separate bowl, whisk together the eggs and milk.

Place half of the zucchini mixture into the greased baking dish. Sprinkle with breadcrumbs.

Pour the egg mixture over the zucchini in the baking dish.

Top with the remaining zucchini mixture.

Sprinkle cheddar cheese and Parmesan cheese over the top.

Bake for 25-30 minutes, or until the cheese is melted and golden.
