  2. Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and crumble.
  3. In the same skillet, sauté the onion and bell pepper until softened.
  4. In a large bowl, whisk together the eggs, milk, Dijon mustard, salt, and black pepper.
  5. Grease a 9x13 inch baking dish. Layer half of the bread slices in the bottom of the dish.
  6. Top the bread with half of the sautéed vegetables, half of the crumbled bacon, and half of the cheddar cheese.
  7. Repeat the layers with the remaining bread, vegetables, bacon, and cheddar cheese.
  8. Pour the egg mixture over the layers in the baking dish.
  9. Sprinkle the Parmesan cheese and parsley on top.
  10. Cover the dish with foil and bake for 30 minutes.
  11. Remove the foil and bake for an additional 10 minutes, or until the casserole is set and the cheese is melted and golden.
  12. Let the casserole rest for 10 minutes before serving.
