Preheat the oven to 200°C (400°F). Wash and scrub the potatoes, then pat them dry.

Poke each potato several times with a fork and place them on a baking sheet. Bake for 45 minutes or until the potatoes are tender.

While the potatoes are baking, grate the cheddar cheese, chop the green onions, and prepare any desired toppings.

Once the potatoes are done, remove them from the oven and let them cool for a few minutes.

Slice each potato lengthwise and carefully scoop out most of the flesh, leaving a thin layer attached to the skin.

In a mixing bowl, mash the potato flesh with sour cream, grated cheddar cheese, salt, black pepper, and butter until well combined.

Spoon the mixture back into the potato skins, filling them generously.

Place the stuffed potatoes back on the baking sheet and return them to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.

Remove from the oven and garnish with chopped green onions.
