Preheat the oven to 325°F (163°C).

In a medium bowl, combine the crumb crust ingredients and press the mixture into the bottom of a greased 9-inch (23 cm) springform pan.

In a large mixing bowl, beat the cream cheese and sugar until smooth.

Add the eggs one at a time, beating well after each addition.

Stir in the vanilla extract, cinnamon, nutmeg, and grated carrots.

Gradually add the flour and mix until just combined.

Pour the batter into the prepared crust.

Bake for 55-60 minutes or until the center is set.

Remove from the oven and let cool in the pan for 10 minutes.

Run a knife around the edges of the pan to loosen the cheesecake, then remove the sides of the pan.
