This cake is also known as ‘Polish Mazurek’. It is a traditional Easter dessert in Poland.

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, mix the flour, sugar, baking powder, and butter until crumbly.
  3. Add the eggs and vanilla extract, and mix until the dough comes together.
  4. Divide the dough in half. Press one half into the bottom of a greased baking dish.
  5. Spread the jam evenly over the dough.
  6. Grate the remaining dough over the jam.
  7. Bake for 40 minutes, or until golden brown.
  8. Allow the cake to cool for 30 minutes before serving.
