In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator.

In a separate mixing bowl, beat cream cheese, sugar, lime zest, and lime juice until smooth. In a small bowl, dissolve gelatin in water. Heat in the microwave for 20 seconds. Let it cool slightly.

Gradually add the gelatin mixture to the cream cheese mixture, beating well after each addition. In another mixing bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture.

Pour the mixture over the chilled crust and smooth the top. Refrigerate for at least 3 hours, or until set.
