  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the sour cream and vanilla extract, and mix until well combined.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Stir in the melted white chocolate.
  6. Pour the batter over the crust in the springform pan.
  7. Drop spoonfuls of raspberry preserves onto the batter and swirl with a knife.
  8. Bake for 60 minutes, or until the center is set and the top is lightly browned.
  9. Turn off the oven and leave the cheesecake inside for 1 hour.
  10. Remove from the oven and let it cool to room temperature.
  11. Refrigerate for at least 4 hours, or overnight.
  12. Before serving, remove the sides of the springform pan and garnish with fresh raspberries.
