Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until softened.

Add butternut squash and apple to the pot, along with cinnamon, nutmeg, salt, and black pepper. Stir well.

Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for 20-25 minutes, until squash is tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the heavy cream. Heat for a few more minutes until warmed through.
