Remove the chestnuts from the boiling water and transfer them to a bowl of ice water.

Peel the chestnuts while they are still warm.

In a large ovenproof skillet, melt the butter and olive oil over medium heat.

Add the pearl onions and cook until golden brown.

Add the garlic cloves and cook for an additional minute.

Add the peeled chestnuts, thyme sprigs, vegetable broth, salt, and black pepper to the skillet.

Bring the mixture to a simmer.

Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.

Braise the chestnuts and pearl onions for 45 minutes, or until the chestnuts are tender.
