Peel and boil the potatoes until tender. Mash them in a large bowl.

Add flour, egg, and salt to the mashed potatoes. Mix well until a dough forms.

Divide the dough into small portions and shape them into dumplings.

Bring a large pot of salted water to a boil. Drop the dumplings into the boiling water and cook for about 10 minutes or until they float to the surface.

Remove the dumplings from the water and drain.

In a separate pan, melt butter and add bread crumbs. Toast the bread crumbs until golden brown.

Serve the dumplings sprinkled with toasted bread crumbs and garnish with chopped chives.
