  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onions are translucent.
  2. Add diced bell peppers, sliced carrots, and diced sweet potatoes. Cook for 5 minutes.
  3. Add canned diced tomatoes, drained and rinsed kidney beans, drained black beans, and frozen corn. Stir well.
  4. Season with chili powder, cumin, paprika, salt, and black pepper. Mix until well combined.
  5. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 30 minutes.
  6. Remove from heat and let it rest for 10 minutes.
  7. Stir in lime juice and fresh cilantro.
  8. Serve hot and enjoy!
