Beets, Spiced Quinoa and Yogurt
Beets are known for their vibrant color and are packed with essential nutrients like folate, potassium, and vitamin C.

Preheat the oven to 400°F (200°C).

Wrap the beets in aluminum foil and roast them in the oven for about 45 minutes or until tender. Let them cool, then peel and dice.

Rinse the quinoa under cold water. In a saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat, cover, and simmer for 15 minutes or until all the water is absorbed.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.

Add the ground cumin and coriander to the skillet and cook for another minute.

Add the cooked quinoa and diced beets to the skillet. Stir well to combine.

Season with lemon juice, fresh mint, salt, and black pepper.

Serve the quinoa and beet mixture with a dollop of yogurt on top.
