Cook barley according to package instructions.

In a large pan, heat olive oil over medium heat. Add chopped onion and minced garlic. Cook until onion is translucent.

Add mushrooms and cook until they release their moisture.

Add cooked barley, beans, thyme, salt, and black pepper. Stir well.

Pour vegetable broth and simmer for 10 minutes.
