Grain-Stuffed Delicata Squash

Preheat the oven to 400°F (200°C).

Cut the delicata squash in half lengthwise and remove the seeds.

Place the squash halves on a baking sheet, cut side up, and drizzle with olive oil. Season with salt and pepper.

Roast the squash in the preheated oven for 25-30 minutes or until golden and tender.

In a large skillet, heat olive oil over medium heat. Add sliced mushrooms, diced onion, and minced garlic. Sauté until tender and golden brown.

Add cooked grain, spinach leaves, grated Parmesan cheese, salt, and black pepper to the skillet. Cook for another 3-4 minutes, stirring occasionally.

Remove the roasted squash from the oven and fill each half with the grain mixture.

Return the stuffed squash to the oven and bake for an additional 10-15 minutes.

Garnish with fresh sage leaves and serve hot.
