Preheat the oven to 400°F (200°C).

Peel and dice the sweet potatoes.

Toss the sweet potatoes with olive oil, salt, and pepper.

Roast the sweet potatoes in the preheated oven for 25-30 minutes, until tender.

In a large pot, sauté the onion and garlic in olive oil until softened.

Add the roasted sweet potatoes and vegetable broth to the pot.

Bring to a boil, then reduce heat and simmer for 10 minutes.

Use an immersion blender to blend the soup until smooth.

Stir in the heavy cream and season with salt and pepper to taste.

In a separate pan, melt the butter over medium heat.

Add the bread slices and cook until golden brown on both sides.
