Preheat the oven to 350°F (175°C). Cook the rice according to package instructions and set aside.

In a large bowl, mash the bananas. Add the diced mango and apples.

In a separate bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt.

Add the cooked rice and egg mixture to the bowl with the fruit. Stir until well combined.

Grease a baking dish with butter and pour the rice mixture into it. Sprinkle raisins and nuts (if using) on top.

Bake for 40 minutes or until the top is golden brown.

Remove from the oven and let it rest for 10 minutes before serving.
