Balsamic Onion, Mushroom & Blue Cheese Tarts
Blue cheese is often made from cow’s, sheep’s, or goat’s milk and gets its distinct flavor from the mold Penicillium.

Preheat the oven to 400°F (200°C).

Roll out the puff pastry sheet and cut it into 4 equal squares.

Place the puff pastry squares on a baking sheet lined with parchment paper.

In a pan, heat olive oil over medium heat.

Add sliced onions and sauté until caramelized, about 10 minutes.

Add mushrooms and continue to cook for another 5 minutes.

Stir in balsamic vinegar, salt, and black pepper.

Remove the pan from heat and let the mixture cool slightly.

Divide the onion and mushroom mixture evenly onto the puff pastry squares.

Crumble blue cheese on top of each tart.

Sprinkle fresh thyme leaves over the tarts.

Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown.

Remove from the oven and let the tarts rest for 5 minutes.
